Bittman's #2 IS, in fact, astonishing.

Here's my lunch - it was absolutely delicious. I trudged up the hill to the Brooklyn Heights farmers market and voila - only $32 later, I'd picked up everything I needed for this salad plus loads more for the next few days. The peaches weren't quite ripe, but I threw 'em in anyway. I thought they added a bit of crunch. Normally I am a fan of neither fruits in salads (with some notable exceptions such as figs and pears with blue cheese) nor cilantro, ever, but I vowed to stay true to his vision and I was richly rewarded. I used a whole lemon and mixed it with olive oil separate from the salad. At the end, I was so enamored with the flavors that I used my Finn Crisps to sop up the remaining dressing.

Here are a couple of shots of the farmers market. Super yummy, fresh things all around.

It isn't cheap though. That is for sure. But I ran the healthy-factor profile through NutritionData.com and I found that this little lunch is power packed with dietary fiber, vitamin A and vitamin C. Also very low glycemic load and mildly anti inflammatory (I have no idea what that last one means).

I'll be working with the eggplant later this weekend in some capacity.
